Description
The Fresh Summer Black Truffle, also known as Scorzone, is an aromatic variety belonging to the species Tuber Aestivum Vittadini.
Externally, it has a black rind with pyramid-shaped warts, while inside the gleba is dark yellow tending to hazelnut. Its aroma is delicate yet distinctive, making it perfect for warm dishes such as pasta, risotto, eggs, or white meats.
It grows spontaneously in clay and sandy soils, from the plains up to 1000 meters in altitude, in symbiosis with various tree species (oak, hazel, holm oak, pine, beech).
The harvest takes place from mid-May to the end of August.
Renowned for its versatility and delicacy, the Summer Truffle can also reach considerable size.
